Favorite Guacamole

I have to start off by saying two words no food blogger should probably ever say. But I feel it in my heart. I've got to let it out.

Holy guacamole.

I went there. I know. *Unsubscribe*

The truth is, if you're into hosting or gathering with friends, you need a throw down recipe that is fast, easy and mind-blowing. Isn't that a way we serve the people we love? Making delicious food that gets demolished in minutes?

I don't have fancy tricks or ingredients to share. I come only with a deep love for guac and a passion for sharing it with others. I like to keep it "undone"- never over mashing or mixing. Equal parts avocado and toppings. And like with most comfort food, it is crucial you make this guacamole your own. It has to wow you.

Here are my recommendations for best results:

Use one jalapeƱo for mild guac (as in, Linden can enjoy it with one.) Two jalapeƱos for a nice spice. Juice of one lime for a mellow flavor. Two limes if serious tang is your thing! Before dicing the romas, cut them in half and remove the seeds. And before scooping the avocado, score each half for easy mashing. You may notice that garlic didn't make the list, and that is on purpose. I like letting the avocado shine. (And helping you avoid garlic breath at a party. You're welcome.)

Go for it, y'all!

And, as always, let me know what you think!

P.S. This recipe brought to you by Frozen and a snack bar that kept Linden so happy while I chopped and took pics. In case you thought toddlers are great blogging assistants! ;)
