Strawberry Breakfast Toast


We have a full-blown art studio in our apartment. And this prodigy kid cranking out masterpiece after masterpiece. She sits in her creative storm, demanding "purple!" - "no, blue!" - "no, purple!" as she furiously creates her next watercolor landscape. Ok fine, maybe it's not that dramatic. But I like to think the full ride to college is happening somehow! 


Growing up with a passion for anything art-related and going to an elementary school whose focus was nurturing our creativity gave me a deep love for the power of creativity in our lives. It is magical introducing Linden to the fun and wonder of it. 

At this age, she is both technical and artistic. She'll spend almost an hour trying to figure out how a charger plugs into a phone or how the zipper works on her diaper bag. But she's also innately drawn to color and nature and lives in her imagination. I'm so curious who she will become! 


Breakfast can be both, too. Utilitarian (read: easy) and beautiful. I firmly believe that breakfast should be effortlessly simple so that the enjoyment is purely from how good it tastes. 



I had several questions a few months ago about this "recipe," so I thought I'd show you just how un-recipe this is. I freaking love Ezekiel English Muffins, especially the cinnamon raisin ones. Other than being d e l i c i o u s, the low-glycemic index, sprouted grain bread helps fuel you too! Here's the technical:
When these six grains and legumes (wheat, millet, barley, lentils, soybeans, spelt) are sprouted and combined, an amazing thing happens: 
  • Source of Complete Protein - Rated 84.3% as efficient as the highest source of protein (comparable to that of milk or eggs)
  • Contains 18 Amino Acids - Including all 9 essential amino acids
  • Increased Digestibility - Sprouting breaks down starches in grains into simple sugars so your body can digest them easily.
  • Increased Absorption of Minerals – Sprouting breaks down enzyme inhibitors, so your body can more easily absorb calcium, magnesium, iron, copper and zinc.
  • Increased Vitamin C - Sprouting produces vitamin C.
  • Increased Vitamin B - Sprouting increases the vitamin B2, B5 & B6.
  • Great source of Fiber - Combining sprouted grains and legumes gives a good amount of natural fiber in each serving.
