Smoky Baked Tofu Bowl



This is my comfort food. My comfort zone. Hearty and healthy, sweet and savory, filling and feel-good. 1,000 times, yes. I'm finding my way back into thoughtful, creative cooking. I mean, kids or not, a busy life does not lend itself to anything but efficient dinners. (I love efficiency. Love it.) 

This is not a one-pot meal. But, creating these simple elements and seeing the colors come together is pretty magical. It's food therapy. Just take one ingredient at a time, give it some love, be creative, then move to the next. The kind of meal that reminds me how much I love cooking. 

So, gather up your supplies and get ready for the "yummmmmmmm!" You'll need two baking pans, one small pot, a small mixing bowl and a blender. The rest is just chopping, sprinkling spices and adding your own flare! 

And, seriously, do not be afraid to make this your own!
